Ingredients

  • 1/2 teaspoon sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon mirin
  • 2 pinches pepper
  • 3 eggs
  • Oil (in pan)

Instructions

  1. Mix ingredients - Mix all ingredients together. Do not overmix, no bubbles.

  2. Heat pan - Heat a square pan and add oil.

  3. Pour first layer - Pour a thin layer of the egg mixture into the hot oiled square pan.

  4. Add toppings - Add toppings if applicable.

  5. Roll - Roll the first layer tightly, then push to one side. Add more egg mixture and roll again.

  6. Repeat - Continue until you’ve used all the egg mixture or reached desired size.

Tips

  • Use a rectangular tamagoyaki pan for the traditional shape.
  • Optional toppings include green onions, nori, or cheese.
  • Serve sliced with rice and other Japanese dishes.
