Single Skillet Pasta

One-pot pasta with bacon, tomato sauce, and cream.

Ingredients

  • 1 strip bacon, diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, diced
  • 2 cups broth (any kind)
  • Salt, to taste
  • 3/4 cup tomato sauce (any kind)
  • Pasta, any kind
  • 1/2 cup heavy cream
  • 1 tsp butter
  • 1 tsp oregano
  • 1 tsp thyme
  • 1/2 tsp saffron (optional)
  • 2 tsp paprika powder (smoked is OK)

Instructions

  1. Cook the bacon - In a large skillet over medium-high heat, cook the bacon until crispy. Remove bacon and leave the fat in the pan.

  2. Sauté aromatics - Sauté the garlic and onion until soft and fragrant. Add the dry pasta and stir to coat and lightly toast.

  3. Cook pasta - Add the broth, spices, and bacon. Cook pasta for 6-8 minutes.

  4. Add butter and salt - Stir in butter and salt. Simmer for another minute.

  5. Finish - Add heavy cream and tomato sauce. Stir and simmer another 5 minutes. Done.

Tips

  • Adjust the amount of pasta based on how much liquid you have.
  • Add more broth if the pasta is too dry.
  • Top with Parmesan cheese before serving.
