Lavender Syrup

Fragrant lavender syrup perfect for teas, coffees, cocktails or baked goods.

Ingredients

  • 1 1/2 cups water
  • 1 cup sugar (ratio, boil to simple syrup)
  • 2 tablespoons lavender (dried flowers)
  • 1/2 lime juice, after straining and reheating

Instructions

  1. Make simple syrup - Combine water and sugar in a saucepan. Bring to a boil until sugar dissolves.

  2. Add lavender - Add lavender flowers and let steep for 5-10 minutes.

  3. Strain - Strain out the lavender flowers.

  4. Add lime juice - Reheat the syrup and add lime juice. Stir well.

Tips

  • Use culinary lavender, not decorative lavender.
  • Don’t steep too long or hot, it will become bitter.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • Great for cocktails, lemonade, or in royal icing.
