Chicken Soup
A hearty and flavorful chicken soup loaded with vegetables and aromatics.
Ingredients
- Skinless, fatless chicken chunks
- 3 celery stalks, chopped
- 1 or 2 carrots (preference), chopped
- 1 malanga or potato (preference), chopped
- 1 onion, chopped
- 1/2 green pepper, chopped
- 2 garlic cloves, chopped
- Cilantro, chopped
- Cumin
- Oregano
- 1 tomato, in quarters
- Salt
- Corn on the cob, small chunks
- 3 stalks of chives, chopped
- Paprika or bijol
- Noodles
Instructions
Combine all ingredients - Place chicken, all vegetables, and spices in a large pot with enough water to cover.
Cook - Bring to a boil, then reduce heat and simmer until chicken is cooked through and vegetables are tender, about 45 minutes.
Add noodles - In the last 10 minutes of cooking, add the noodles and cook until tender.
Serve - Ladle into bowls and enjoy hot.
Tips
- Use bone-in chicken for more flavor, then remove bones before serving.
- Adjust seasoning to taste.
- This soup tastes even better the next day.
