A hearty and flavorful chicken soup loaded with vegetables and aromatics.

Ingredients

  • Skinless, fatless chicken chunks
  • 3 celery stalks, chopped
  • 1 or 2 carrots (preference), chopped
  • 1 malanga or potato (preference), chopped
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 2 garlic cloves, chopped
  • Cilantro, chopped
  • Cumin
  • Oregano
  • 1 tomato, in quarters
  • Salt
  • Corn on the cob, small chunks
  • 3 stalks of chives, chopped
  • Paprika or bijol
  • Noodles

Instructions

  1. Combine all ingredients - Place chicken, all vegetables, and spices in a large pot with enough water to cover.

  2. Cook - Bring to a boil, then reduce heat and simmer until chicken is cooked through and vegetables are tender, about 45 minutes.

  3. Add noodles - In the last 10 minutes of cooking, add the noodles and cook until tender.

  4. Serve - Ladle into bowls and enjoy hot.

Tips

  • Use bone-in chicken for more flavor, then remove bones before serving.
  • Adjust seasoning to taste.
  • This soup tastes even better the next day.
