Black Bean Stew

Traditional black beans cooked with aromatic vegetables and spices.

Prep: 2 hours 15 minutes Cook: 2-3 hours Total: 4-5 hours Yield: 6-8 servings

Ingredients

  • 1/2 bag washed beans, soaked for 2 hours
  • 1/2 green pepper
  • 1/2 onion
  • 1 garlic clove
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 bay leaves
  • 1 tablespoon vinegar
  • 1 tablespoon cooking wine
  • 1 teaspoon salt (or more)
  • 3 olives
  • 1 aji cachucha (optional)

Instructions

  1. Soak the beans - Wash the beans and soak in water for 2 hours.

  2. Combine all ingredients - Place all ingredients in a large pot with enough water to cover the beans.

  3. Cook - Bring to a boil, then reduce heat and simmer for 2-3 hours until the beans are soft and tender.

Tips

  • Adjust salt to taste at the end of cooking.
  • The longer the beans cook, the more flavorful they become.
  • Serve over white rice for a traditional Cuban meal.
