Black Bean Stew
Traditional black beans cooked with aromatic vegetables and spices.
Ingredients
- 1/2 bag washed beans, soaked for 2 hours
- 1/2 green pepper
- 1/2 onion
- 1 garlic clove
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 bay leaves
- 1 tablespoon vinegar
- 1 tablespoon cooking wine
- 1 teaspoon salt (or more)
- 3 olives
- 1 aji cachucha (optional)
Instructions
Soak the beans - Wash the beans and soak in water for 2 hours.
Combine all ingredients - Place all ingredients in a large pot with enough water to cover the beans.
Cook - Bring to a boil, then reduce heat and simmer for 2-3 hours until the beans are soft and tender.
Tips
- Adjust salt to taste at the end of cooking.
- The longer the beans cook, the more flavorful they become.
- Serve over white rice for a traditional Cuban meal.
